8 Struggle Meals That ACTUALLY Slap

There’s no shame in a struggle meal. It's been said “With no struggle, there is no progress.” Struggle or no struggle, these meals come in at prices that do the limbo better than you can. (My knees hurt just thinking about attempting that.)
So, let’s take a look at 8 meals that are still game-winners, but give your bank account a breather.
1. Eggs
Listen, Sam I Am had it right. Eggs go with everything! Don’t overlook this breakfast staple and all the potential it holds. Scrambled, fried, boiled, throw-it-in-there omelette - eggs are always ready to get it crackin’!
2. Ramen
The GOAT of college dorms and for good reason. At pennies for a pack, it’s hard not to stock up on Ramen for a meal that will hit. Add butter, hot sauce, and if there’s a protein around - call it gourmet and dive in. That microwave will sing your dinner bell in a few minutes - but if you have time, on the stove is better.
3. Fill-in-the-blank Casserole
Unwrap the foil like a Christmas gift and plunge into… lasagna? Meatloaf...? Whatever you got! It’s cheesy, it’s hot, and you can pretend maw-maw sent you home with a pan. Bless your heart. You’ll be full before you know it.
4. Grilled Cheese
Toasted. Cheesy. Easy! This classic is literally served in major restaurants. Fancy it up with soup or tomato slices OR turn up the heat with sriracha mayo or Hot Cheetos (soooo gooood!). There’s only one requirement: cut diagonally.
5. Tuna (yes, the one in a can.)
Something’s fishy here… I know. Trust me. But hear me out… The so-called “chicken of the sea”, is a low-key protein banger! Dice it and spice it. Cold or hot. The list of recipes for making tuna to your liking, is deeper than the ocean blue.
6. Hot Dogs
During summer holidays and festivals - hot dogs are a portable meal. Quick and easy. Tower it with toppings or throw it in the mix with some macaroni. If you’re behind on this struggle meal - c’mon, ketchup.
7. Rice & Beans
It seems every culture has its own take on rice and beans. Savory, dirty, spicy, curry, red, black, pinto or calico. The choice is yours - and since you're on a budget… Bean-go! (Like, BINGO... I tried.)
8. Pizza Bread
A loaf of Italian bread. Cut in half. Add sauce, cheese, and empty the fridge for toppings. Broil. (Watch carefully, DO NOT WALK AWAY!) And… voilà! You can also use French bread instead of Itailian. I don’t speak either language, but I do speak YUM!
There you go! 8 meals to feast your struggle-era OR to just save a little wiggle room in the wallet. Remember, trouble doesn’t always last - and neither will that pantry run. Be grateful for humble opportunities. Bless up and chow down!
